Garlicky Tomato Saffron Soup

Method :
Steep threads in ¼ cup of heated stock. Saute leeks until limp in olive oil. Press garlic into leeks, saute 3 minutes. Add the remaining ingredients, except spinach. Simmer partially covered , 30 minutes. Add spinach, heat trough and serve.

8 cups chicken broth (2L)
½ teaspoon saffron threads
5-6 Roma tomatoes, skinned, seeded and chopped
1 large leek, white part chopped fine
4 tablespoons virgin olive oil
4 large garlic cloves, pressed
½ teaspoon dried thyme. 6 fennels seeds
8 large spinach leaves
