Chicken Cream Soup with Almonds

Method :
Poach chicken breast in 1 cup stock diluted with 1 cup of water. Steep the saffron threads Safinter in wine 20 minutes. Simmer all ingredients except chicken in double boiler 1 hour. Add chicken, heat through.

½ cup ground blanched almonds (75g)
¼ cup white wine (60ml)
3,5 cups chicken stock (840ml)
½ teaspoon saffron threads Safinter
1 cup heavy cream (240ml)
1 teaspoon Dijon mustard
Parsley for garnish
