Wine and Honey-Soaked pippins

Method :
Steep threads in white wine for 1 hour. Place apples, wine and honey in a heavy bottomed pan and bring to a boil. Lower heat and simmer apples until tender but not mushy. Remove from heat and chill for several hours or ovemight. Serve with almond cream.

Almond cream:

Whip cream with almond extract and sugar, if desired. Fold ground almonds. Serve apples in small bowls topped with cream.

6 tart apples, peeled and chopped
1,5 cups white wine (375ml)
˝ cup honey (120ml)
˝ teaspoon saffron threads
1 cup whipping cream (240ml)
˝ cup ground almonds (120g)
1 teaspoon almond extract
