Method :
In a heavy bottomed pan place the milk over high heat until reduced by half, about 35 minutes, stirring constantly. When reduced by half, add the nuts, sugar and spices and continue boiling over high heat, stirring constantly. Mixture will be gradually thickening. After it is reduced by half, you will need to keep it on the heat about another 15 minutes. Remove the mixture from heat, cool to room temperature, then transfer liquid to mold for freezing. Keep stirring while emptying into mold so nuts do not settle at the bottom.

1 gallon extra rich milk (2L)
2 cups sugar (400g)
1 cup unsalted pistachios, chopped (150g)
˝ heaping teaspoon ground cardamom
˝ teaspoon Safinter saffron threads
