Spiced Herb Marinade for Fish or Chicken

Method :

Place all marinade ingredients in a bowl. Rub onto fish or chicken and marinate for 2-8 hours.

Cook meat or fish:

Heat grill to high. Place fish or chicken on oiled rack and cook 3 minutes beneath flame, turning half way through and basting with marinade half way through cooking time.
Advice :
1 large bunch of fresh coriander
1 large bunch flat-leaf parsley
8 garlic cloves, crushed and roughly chopped
1 teaspoon Maldon sea salt
1 tablespoon of ground cumin seeds
1 tablespoon very fragrant crushed dried red pepper
1 tablespoon Safinter ground sweet red pepper paprika
½ cp extra-virgin olive oil
¼ cup fresh lemon juice
4-6 fish fillets, such as salmon or red snapper or 4-6 chicken breasts, flattened
