Method :
Powder threads and steep in vinegar. Cook apples and onions in vinegar until soft, about 30 minutes. Add remaining ingredients, mix well, and cook over low heat for 1 hour until mixture is the consistency of thick applesauce. Seal airtight and refrigerate until ready to use.

5 large apples, peeled and sliced
2 large yellow onions, minced
1 cup white vinegar (240ml)
4 cloves garlic, minced
1 inch piece fresh ginger, grated
˝ teaspoon black peppercorns, crushed
1 teaspoon powdered coriander
2 cups sugar (400g)
