Method :
Powder threads and steep in lemon juice. Simmer parsnips until tender. Drain parsnips and combine all ingredients in food processor or blender and mix until smooth.

Advice :

4 parsnips, peeled and cubed
3 tablespoons butter
½ cup half & half (120ml)
½ teaspoon saffron threads
2 teaspoons lemon juice
Salt and pepper
